Healthy Banana-Oat Breakfast Pancakes (10 Minutes!)

Start your day off on the right foot with these wholesome banana oat pancakes. Made in a blender with 3 key ingredients—bananas, oats and eggs—the batter for these healthy pancakes comes together in no time. The banana naturally sweetens, making these breakfast pancakes totally free of refined sugars.

There are so many things I love about these pancakes. First up, they call for just a few simple ingredients. So simple, that if you were to stop reading and head to the kitchen, you’d probably have everything on hand to whip them up.

Secondly, they’re quick and easy-to-make. Just throw the ingredients into a blender, blitz into a batter, and pan-fry. From kitchen to plate, you’re looking at around 10 minutes, maybe 15 tops. Talk about no-frills🤙.

Last but not least, they’re nutritious-to-boot. They’re naturally sweetened with banana (excluding a drizzle of honey at the end, because yum!), are a good source of protein (just shy of 20g/serve) and dietary fibre (close to a third of the recommended daily intake). All things the Registered Nutritionist in me loves.

The Ingredient Lineup

  • Eggs. You’ll need two size 7 (large) eggs. They’ll help bind everything together, and stop the pancake from falling apart.
  • Oats. Both rolled or quick oats work here. Use whatever’s on hand.
  • Banana. Make sure its ripe – the browner the spots, the sweeter the pancakes will be.

You’ll also need the basics: baking powder to give the pancakes a bit of height as they cook; and butter or oil for frying. Feel free to springboard to other flavour combinations, whether a splash of vanilla, a pinch of cinnamon, or a handful of chocolate chips tossed through the batter.

Tips & Tricks

Keen to give these dairy free pancakes a try? Here are my tried-and-tested tips:

  • Grind the oats into a fine flour. Key for a smooth batter, and better textured pancakes! If you have a high-powered blender, really turn the dial up high here.
  • Let the batter rest. Just for a few minutes while the pan heats up. As the oats absorb moisture from the eggs and banana, the batter will thicken, creating a more cohesive texture.
  • Check the consistency. You’re looking for a batter that pours smoothly and evenly, forming round edges as it spreads out in the pan. If it’s too thick, add a splash of milk or water to loosen it up.
  • Pour from a milk jug. Hot tip: to help encourage perfect pancake circles pour the batter out of a small milk jug directly into the fry pan.
  • Cook low and slow. Fry the pancakes over medium-low heat so they cook through without burning. You might want to start with a medium heat to bring the temperature up for cooking, then reduce it down.

Ever noticed how the first round of pancakes always turn out a bit meh looks-wise? It’s actually a thing! Factors like the rising frying pan’s temperature, changes to the batter’s consistency, the amount of oil or butter used, and your cooking technique, can all impact what the pancakes look like. As you continue to cook, these factors tend to stabilise, resulting in better-looking pancakes.

Plate Up

Serve hot off the fry pan with a drizzle of honey or maple syrup, and whatever else your tastebuds desire. I love a good dollop of Greek yoghurt and fresh fruit.

Ingredients:  

  • 1 ripe banana, medium
  • cup rolled oats
  • 2 eggs
  • ¼ tsp baking powder
  • Butter or oil, to fry
  • Optional: A splash of milk or water, if the batter is too thick

Method:

  • Add the rolled oats into a food processor and grind into a flour consistency. If you have a high-speed blender, turn the dial up here!
  • Blend the remaining ingredients (except the butter or oil) together until you have a smooth batter. You want the batter pourable, but not too runny.
  • Heat up the oil on a fry pan over a medium heat. Pour circles of the batter onto the pan and cook each side for 1-2 minutes, or until lightly golden and cooked through. Hot tip: to get perfect pancake circles pour the pancake batter out of a small milk jug into the pan.

  2. Thanks for sharing this beautiful recipe, it came out delicious 🙂 I want to make this recipe again, but I have no bananas left, is there any possibility to sub the bananas for applesauce? If possible, how much applesauce should I put instead?

My boy loves pancakes and I was looking for a healthier alternative, I have tried flour substitutes and other recipes but this is the best so far, I wont look any further actually, cooked well, a filling recipe with the oats, easy as, and most importantly my son loved them…I loved them too. Yummy!
