Papaya breakfast boats - way cooler than your classic muesli and yoghurt duo. This fun breakfast option has to be one of the simplest, yet prettiest, of breakfasts to make! Simply hollow out a papaya to create a gloriously golden edible bowl, and then go crazy filling it with all sorts of deliciously nutritious goodies, like nutty mueslis, dollops of fresh yoghurt, bites of fresh fruit, coconut chips, edible flowers and whatever else your heart (and tummy) desires. This will all up take you a few minutes too, so it's a super speedy breakfast option for any day of the week.
The papaya is a sweet buttery fruit with a musky flavour. It's wonderful in promoting healthy digestion as it's rich in the digestive enzyme papain. Much like the enzyme bromelain that's found in pineapple, papain is known for its protein-digesting properties, which provides a helping (enzymatic) hand to our bodies digestive processes. Papaya is also a rich source of antioxidants which helps fight free-radicals, and in doing so protects against ageing, disease and poor health - think of antioxidants as the police and free-radicals as the baddies. If you don't have police roaming the streets, the baddies may run riot and cause some serious damage.
During our trip to Samoa last week we had papaya drizzled with a little lime juice to kick off breakfast time, and hot damn was that a great combination. I love papaya in general, but an extra squeeze of tart lime juice on top really takes it to next level deliciousness. Try adding a squeeze next time!
Papaya Breakfast Boats
1 lime (optional, but great)
Your favourite muesli or granola (opt for a sugar-free/low-sugar nut and seed mix)
2 tablespoons of plain unsweetened plain yoghurt or coconut yoghurt
Fresh fruit of your choice e.g. strawberries, raspberries, banana
Extras: nuts, seeds, edible flowers or coconut chips to sprinkle on top
1. Cut your papaya in half length ways. Carefully scoop out the inner black seeds with a spoon and discard.
2. Squeeze lime juice all over the papaya.
3. Fill the hole with the muesli/granola and then top with the yoghurt and fresh fruit.
4. Decorate with extra nuts, seeds, edible flowers or coconut chips.
